The tremendous taste of Vermont cheese originates in the state’s verdant hillsides and fertile valleys, where a delicate balance of soils and climate give rise to ideal conditions for dairying. Vermont farm families were already making cheese and butter for their own consumption in the 1700s. With the advent of railroads in the 1850s, local creameries formed to ship fresh dairy products to expanding markets. The first Vermont cheese factories opened soon after; Vermont cheddars and other cheeses could then be made in large quantities with consistent quality. For a brief time around 1860, Vermont was the country’s largest cheese producer, exporting cheddar to Europe and the Caribbean. Today, Vermont produces over 100 million pounds of cheese every year, from traditional aged cheddar to a variety of soft specialty cheeses. Cheddar, Colby and Monterey Jack are perfect with wine and fruit. They also compliment
pastas, salads, and grilled sandwiches.
Fill a meringue tart shell with a light blend of Fromage Blanc and raspberry puree. Garnish with bitter chocolate shavings.
Toast a bagel; spread it with cream cheese and apples cider jelly.
Roll fresh Chevre (goat cheese) logs in orange zest and refrigerate. Serve slices with
fresh fruit for dessert.
Add a small amount of olive oil to herbed fresh cheese and combine with hot pasta.
Use mild and tangy feta cheese in a Greek cheese spinach pie. Add a tossed salad and warm bread for a delightful supper.
For an elegant lunch, serve silver dollar cottage cheese pancakes with a creamy
horseradish sauce.
Brie and Camembert are ideal with fresh grapes, sliced pears, apples, and French
bread.

1 oz. butter
1 small onion, diced
1 cup milk
1 cup mayonnaise
5 eggs
sea salt and pepper to taste
1 ½ cups grated Vermont cheddar cheese
1 bunch broccoli flowerettes, blanched briefly
1 blind-baked pie crust
In a sauce pan, sweat onion in butter until softened. Remove from heat. Place onions in bottom of pre-baked 10-inch pie shell and fill shell with blanched broccoli. Combine milk, mayonnaise, eggs and season to taste. Pour wet mix into shell and bake on a sheet pan at 375° until done (approximately one hour). Keep at room temperature during service, heating to order if necessary.
